Guild secrets passed from master to apprentice through demonstration alone, a tradition so absolute that we possess almost no written recipes from the guild kitchens that fed Istanbul for five centuries. What survives instead are fragments: palace kitchen registers recording bulk purchases of saffron and almonds; the observations of foreign travelers permitted to witness imperial feasts; a single fifteenth-century manuscript that predates the guild system's strictest enforcement; and ceremonial records describing dishes served at royal celebrations and Janissary pay ceremonies. This menu represents our attempt to reconstruct these lost dishes.

I love it here, I really hope they are successful and make a go of it. The food is delicious and often unique and imaginative. Sometimes familiar flavors sometimes completely new. I also appreciate that the N/A cocktails are actually cheaper than the regular ones (many places don't do this). Oh and the naan will change your life.
We ordered Naan (butter and cilantro) a chicken dish (Murgh Makani) and a beef dish (Nahiri) with a delicious Moscow mule and thought the quality was excellent. It is tipless so a little more spendy overall but love that they pay staff a living wage. The Naan was stupendous. We were so hungry I forgot to take pics before we dove in..
The best south Asian meal I've had in years. Subtler flavors and more delicate textures than typical Indian fare. Bright cozy setting, sophisticated yet relaxed. The naan, usually a boring side dish, was incredibly incredibly tasty.
Outstanding flavors! This is some seriously tasty food. I shared Ratatouille and a Tandoori Chicken with raisin sauce. Both were great. I usually go for a meat dish but the Ratatouille was incredibly satisfying. Their nan bread is addictive. Kind, competent service. This was a 2nd time here. We will back soon.
I was skeptical about Sultan as it is a different approach to southeast asian food than what I was used to. But the small plates idea works very well here because the food is creative and excellent. We've been several times and there is always something new and interesting to try. But don't pass up that garlic naan and dipping sauces!
